Ricotta-Prosciutto Sandwich
This is the sandwich summer dreams are made of. Eat it outside on a hot day and then inside on a cold day to bring back the memories.Ingredients
- ½ fresh baguette
- ¼ cup ricotta
- 2 slices prosciutto
- ¼ cup baby arugula
- 1 – 2 tablespoons fig jam
Preparation
- Slice the baguette in half just before making this sandwich.
- Slather the bottom half with a borderline obscene amount of ricotta (you don’t have to measure). Then, pile on prosciutto and baby arugula.
- Spread a thin layer of fig jam on the top layer of baguette and put it all together. Ideally, serve with sparkling mineral water and some crisp apple slices.
