Magic Peanut-Sesame Sauce

This recipe is the approximation of a sauce we really just whip together without normally measuring—a magic combo of spice, sweetness, and umami we use on lettuce wraps, steak salad, whatever. Don’t worry too much about the proportions listed here—mix the base and then taste and adjust as you go.

Ingredients

  1. ¼ cup low-sodium soy sauce
  2. ¼ cup smooth peanut butter
  3. 2 tablespoons toasted sesame oil
  4. 1 tablespoon gochujang, (fermented chili paste)
  5. 2 dashes rice vinegar

Preparation

  1. Whisk soy sauce and peanut butter together in a small bowl until emulsified.
  2. Mix in remaining ingredients, whipping vigorously until the sauce comes together with the consistency of hot fudge. To thin it out, add more sesame oil (untoasted if you have some on hand).
  3. Taste and adjust, adding more gochujang to match your spice preferences.
